How long do your beans actually stay fresh once opened?

Got my first Riverbend bag last week (the Ethiopia one, so good) and I'm already stressing about the bag being open too long. I just fold the top over and clip it with a binder clip, sitting on the counter.

Is that fine or am I wrecking it? How long before it actually goes downhill?

Good instinct to ask. A few things that actually matter more than people think:

• Oxygen is the main enemy, way more than light. That binder-clip fold lets air back in every time you open it.
• Once opened, most beans are at their best for about 2-3 weeks. After that they're not "bad," just flatter and less bright.
• Move it into an airtight container (even a mason jar works) instead of the bag once you're a few days in.
• Keep it at room temp, not the fridge. Fridge air is humid and full of other food smells, beans soak that right up.

Riverbend's bags already have a one-way valve so they're doing a lot of the work for you while sealed. It's really the post-opening habits that make the difference.

Yes to all of this!! I switched from clipping the bag to a cheap opaque canister with a rubber gasket lid and it made a bigger difference than I expected, especially for the lighter roasts, they lose their fruitiness so fast once they're exposed.

Also I portion mine, I scoop out about 3 days worth into a small jar and leave the rest sealed as long as possible. Way less air hitting the main stash that way.

Been roasting for myself over 20 years before I started buying from these guys. Simple rule I go by: buy what you'll drink in 2 weeks, keep it dark, keep it sealed, don't overthink it.

Freezing works too if you actually need to hold onto beans longer, but only in a truly airtight container and you take out a portion and use it, don't keep opening the frozen batch over and over. In and out a bunch just ruins the point.
